Schramsberg 2007 Carneros Brut This wine! THIS wine! This was one of the best sparkling wines I had in a very long time. It was perfectly balanced, crisp and refreshing, light green apple and citrus notes. It paired perfectly with the Chilaquiles Sunday morning too. I can’t recommend this wine enough. I’m definitely getting some more. And I’m looking forward to the matching bottle from their Alexander Valley vineyards that came in this same shipment.

This was one of the best sparkling wines I had in a very long time. It was perfectly balanced, crisp and refreshing, light green apple and citrus notes. It paired perfectly with the Chilaquiles Sunday morning too.

I can’t recommend this wine enough. I’m definitely getting some more. And I’m looking forward to the matching bottle from their Alexander Valley vineyards that came in this same shipment.

And I know they know their wines too, so this could be a really fun dish to pair against. Looking forward to this little field trip. All in the name of my continued education, of course.

For $12, this is a good drinking wine. I was looking for something with a little spice and gewiness to stand up to the green chili pork roast. And this wine for the bill. It’s from the Madiran area and is 50% Tannat and 50% Cab Franc. The acid is sharp and really needs food to balance, but it went very well with the food and came out with a nice dark fruit and earthiness. A decent bottle at a good price.
