Holy shit! This brings me back to when I was about 8 years old. I remember this phase my Dad went through when he as trying out a lot of cajun cooking, and Justin Wilson was on PBs at the time too. We used to watch this show, and he still loves to quote this guy once in a while too.
How can you NOT love this guy?

Chilaquiles!
Finally made s decent batch of Chilaquiles for breakfast Sunday. Breakfast sausage, sautéed with dice onions and cumin with green chili sauce. Proper scrambled eggs, and some refritos. Fresh avocado, and some Cholula, and we’re golden.
This is, by far, my most favorite breakfast meal. Probably my most favorite meal of all meals during the week, especially paired with the awesome Schramsberg sparkling we drank.
friday morning ritual. farmers market run. upper west side. asparagus, french style radishes, chard, smoked blue fish.
healthy in. healthy out.

Dinner time is for the sexy food.
Pork is the best.
And agreed that dinner is a time to relax and have something nourishing. Cooking dinner has always been like meditating for me. It’s a time to let go of the bullshit from the day and celebrate one of life’s simple pleasures.
