There was also an amazing 7 hour braised brisket with broccoli di cicco. The brisket was cooked by one of our sous chefs, Eddie Dick. Eddie excels at the long cook. He is the man often responsible for our soups, nine hour bolognese and other braised things. We discussed the prospect of positioning him as the anti-Rachel Ray. Perhaps with a show called, “7 Hour Meals”, with a live stream throughout. With the uptick of interest in the Slow Food movement, it feels there could be a market for this.
Damn I miss NOPA.
